These salad pots are so great to prep ahead and have in the fridge to grab or busy school or work days. Having them in the pots meals they are portioned so it saves you valuable time.  Layering the ingredients means they keep well and when you tip them out of the pot the dressing coats the rest of the salad ingredients.

Ingredients

  • ¼ cup white beans
  • ½ cup cooked orzo
  • 2-3 tablespoons Tahini dressing - see below
  • 2 inch piece cucumber - diced
  • 1 tablespoon red pepper, small dice
  • ⅓ small red onion, finely diced
  • 50g feta, crumbled
  • 1 tablespoon toasted flaked almonds
  • Small handful mixed leaves

For the Tahini dressing: enough for 3 salad pots 

  • ¼ cup extra-virgin olive oil
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 2 teaspoon maple syrup
  • ½ teaspoon salt
  • 1-2 tablespoon cold water

Method

  1. Simply add all the ingredients to a 16oz prepa pot in the order of the ingredients list.

  2. Store in the fridge for 3 days.

  3. To eat, tip out onto a plate.

Optional: for a bit of extra dressing, spray olive oil, mix, enjoy!

Dressing: Measure everything into a bowl, whisk together really well. Taste and adjust if needed.

How to Make This Meal Work for You

1. Prep

Cook your orzo ahead of time according to the package instructions and let it cool completely. Dice your cucumber, red pepper, and red onion, crumble your feta, and measure out the remaining ingredients so your assembly line is ready to go.

2. Cook

There is no cooking for the salad itself just whisk up your tahini dressing ingredients in a bowl until smooth. Layer everything directly into the container in the order listed to ensure the salad stays perfectly fresh without getting soggy.

3. Store

This recipe makes 1 perfect portion. Store it in our 16oz prepa pots in the fridge for up to 3 days. When you're ready to eat on a busy work or school day, simply grab it and tip it onto a plate so the dressing beautifully coats all the ingredients!
