A rich, comforting slow-cooked beef ragu made with tender beef, vegetables and a simple tomato sauce. Perfect for a cosy family dinner, this is a brilliant make-ahead meal for busy weeks. Cook once, enjoy for dinner and save the rest for another day — it freezes beautifully too, making it a great addition to your prepa meal prep routine.

Ingredients

  • 2 tbsp olive oil
  • 1kg stewing beef or house keepers cut/round roast cut into chunks
  • 1 onion, diced
  • 2 carrots, diced or grated
  • 2 celery sticks, diced
  • 3 garlic cloves, chopped
  • 2 tbsp honey or brown sugar
  • 2 tbsp tomato purée
  • 1 x 400g tin chopped tomatoes
  • 500ml hot beef stock, more water if needed
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp smoked paprika
  • 1 tbsp Worcestershire sauce, add at the end
  • 300g rigatoni or tagliatelle pasta
  • 50g Parmesan, finely grated
  • Fresh basil or parsley, to serve
  • Salt and freshly ground black pepper
  • 200ml red wine optional*

Method

  1. Preheat the oven to 170°C fan.
  2. If using house keeper cut/round roast beef, cut into chunks.
  3. Heat the olive oil in a large ovenproof casserole dish. Season the beef
    with a pinch of salt and pepper and brown in batches, then set aside.
  4. Add the onion, carrots and celery and cook for 8 minutes until
    softened. Stir in the garlic and cook for 1 minute.
  5. Add the tomato purée and cook for another minute before stirring in the
    chopped tomatoes, beef stock, *red wine if using, honey or sugar, oregano, basil and smoked
    paprika.
  6. Return the beef to the pan, bring to a gentle simmer, cover with a lid
    and transfer to the oven.
  7. Cook for 2½–3 hours, until the beef is tender enough to shred
    with two forks. If it's not tender, cook for longer. If the sauce is very thick
    add some water to loosen.
  8. Remove the beef and shred it with two forks add it back into the sauce
    add the worcestershire sauce, taste and season more if needed.
  9. Meanwhile, cook the rigatoni or tagliatelle according to the packet
    instructions. Drain and stir through the sauce.
  10. Finish with Parmesan and fresh herbs before serving.

For slow cooker: Follow the steps but add 250ml beef stock rather than the 500ml used in the original recipe and stir everything together.

Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is really tender and easily pulls apart with a fork.

How to Make This Meal Work for You

1. Prep

Check the freezer and fridge before you shop and plan to make a double batch if you have the time.

Choose a day when you have a little extra time—the ragu can cook away while you get on with other things.

2. Cook

Cook the ragu slowly so the beef becomes really tender and the sauce develops plenty of flavour.

Add extra grated carrots, courgette or mushrooms to make the sauce go further and add extra vegetables.

Keep some for dinner tonight and set aside the rest for another meal before serving.

3. Store

Allow the ragu to cool completely before portioning.

Divide into family-sized or individual portions and store in your prepa reusable bags or containers.

Label with the name and date, then refrigerate for up to 3 days or freeze for up to 3 months.

Defrost overnight in the fridge and reheat until piping hot throughout.
