These Mini Pesto Sausage Rolls are a delicious make-ahead snack that's perfect for meal prep, lunchboxes and busy family life. Easy to bake, freezer-friendly and packed with flavour, they're ideal for storing in prepa reusable bags so you always have a homemade snack ready to go.

Ingredients

  • 1 sheet ready-rolled puff pastry
  • 400g good-quality pork sausage meat
  • 1 small carrot (about 80g), finely grated
  • ½ small courgette (about 80g), finely
    grated
  • 2 tbsp red pesto or green if you prefer
  • 15g oats
  • 1 egg, beaten (for glazing)
  • Sesame seeds (optional)

Method

  1. Preheat the oven to 200°C (180°C fan) and line a large baking tray with baking paper.
  2. Place the grated carrot, courgette and onion into a clean tea towel and squeeze out as much moisture as possible.
  3. In a large bowl, combine the sausage meat, grated vegetables, red pesto and oats. Mix well until evenly combined.
  4. Unroll the puff pastry and cut it lengthways into two long strips.
  5. Divide the sausage mixture in half and shape it into two long logs down the centre of each strip of pastry.
  6. Brush one edge of each pastry strip with a little beaten egg, then fold the pastry over the filling, pressing the edges together to seal with a fork.
  7. Then cut each roll into 6 equal pieces to make 12 sausage rolls.
  8.  Place onto the prepared baking tray. Brush with the remaining beaten egg and sprinkle with sesame seeds, if using.
  9.  Bake for 30–35 minutes, or until the pastry is crisp and golden and the filling is cooked through.
  10. Leave to cool for a few minutes before serving warm or cold.
